Our sashimi-grade Atlantic salmon sourced from Norwegian fjords and Scotland are delivered to our kitchen every day, on ice. Fish ‘pros at our sushi restaurant Westfield White City prepare each piece of sushi with a finely orchestrated ritual of cutting, slicing, brushing, and rolling. Their sashimi expertise is gained with extensive professional training. Sushi rice is cooked in Suzumo cookers by our rice ‘pros to an exact temperature calculated down to the last degree. 

We have in-house sourcing experts who identify the best ingredients. Our seasonal vegetables are always steamed and never fried. The chicken is never frozen and always freshly delivered from British farms with Better Chicken Commitment policies. Our chocolate mochi contains cocoa from Rainforest Alliance Farms. With a selection of plant-based dishes at our Japanese restaurant Westfield White City, we welcome vegans and vegetarians. Gluten-free, dairy-free, and soy-free options are available as well.
