Pristine sashimi-grade Atlantic salmon from Norwegian fjords and Scotland is sustainably sourced for our sushi. We choose whole grain brown rice for its nutty texture and high fibre content. Our steamed gyoza is a tireless innovation. We only use authentic miso paste from the Nagano Valley, and our soy sauce is brewed to a recipe perfected 2000 years ago.
