umami'meatball rice bowl

you will need
- 1 pack itsu sticky hoisin umami'meatballs
- 2 microwave sticky rice pots
- 1/2 a cucumber
- 1 carrot
- 1 handful edamame beans
- 2 tbs rice wine vinegar
- 1 tsp crispy chilli oil
- sesame oil
- black sesame seeds [optional]
- spring onion
- 2 radishes
- soy sauce [optional]
lets get cooking
step 1
Cook the meatballs as per pack instructions

Smash the cucumber & cut into chunks, add to a bowl, and mix in the chilli oil and 1 tbsp of rice wine vinegar.

In a separate bowl grate the carrot and mix in the edamame beans, a tbsp of rice wine vinegar, and a drizzle of sesame oil.

In the meantime, cook the rice as per cooking instructions.

Add the rice to two bowls then top with the cucumber, carrot & edamame, and umami’meatballs

Finish with black sesame seeds, finely chopped spring onion, finely chopped radish & some soy sauce [optional]
