Seiko’s chicken ramen
you will need
- 1 carton itsu chicken ramen brilliant'broth
- 180g ramen noodles (or egg noodles)
- 2 chicken breasts
- 4 baby pak choi
- 2 handfuls sugar snap peas
- 2 eggs
- 1 spring onion
let's get cooking
step 1
Grill or pan fry the chicken breasts with salt, pepper and olive oil. About 10 mins each side.

Boil the eggs [6.5 mins from chilled for a medium yolk], and then submerge in cold water before peeling.

While the chicken & eggs are cooking submerge the egg noodles in boiling water for 4-5 minutes.

Cut the pak choi length ways and steam with the sugar snap peas for 3 minutes.

Add the chicken ramen brilliant’broth to a pot and heat to a simmer.
step 6
When the noodles are cooked, separate them into two bowls and pour over the simmering brilliant’broth.
step 7
Top with the sliced chicken breast, pak choi, peas, and a boiled egg.
step 8
Finish with fine chopped spring onion.
